Three-Cheese Spaghetti Bolognese
Serves: 4–6Prep: 15 minutes
Cooking: 40–45 minutes A rich beef Bolognese tossed through spaghetti and finished with three cheeses for an extra creamy, savoury twist. Mozzarella brings the stretch, Parmesan adds bold savoury flavour, and cream cheese melts straight into the sauce for a silky finish.
Ingredients
- 500 g beef mince
- 400 g spaghetti
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, finely grated
- 1 tbsp BlixSam Pasta a la Sam
- 2 tbsp tomato paste
- 1 × 400 g tin chopped tomatoes
- 250 ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar
- 100 g cream cheese
- 1 cup grated mozzarella
- ½ cup finely grated Parmesan
- Fresh parsley or basil, for serving
Method
- Cook the spaghetti in salted boiling water until just al dente. Reserve about ½ cup of the pasta water before draining.
- Heat the olive oil in a large pan. Add Pasta a la Sam and bloom for about 20–30 seconds to release the flavour.
- Add the onion, garlic and grated carrot. Cook for 4–5 minutes until softened.
- Increase the heat, add the beef mince and cook until deeply browned, breaking it apart as it cooks.
- Add the tomato paste and fry for 1–2 minutes until it darkens slightly.
- Stir in the chopped tomatoes, beef stock, Worcestershire sauce and brown sugar.
- Reduce the heat and simmer uncovered for 20–25 minutes until the Bolognese is rich and thick.
- Reduce the heat to low and stir in the cream cheese until completely melted into the sauce.
- Add the cooked spaghetti and a splash of reserved pasta water. Toss until every strand is coated.
- Add the mozzarella and Parmesan, tossing gently until the mozzarella starts melting and the sauce becomes cheesy and glossy.
- Serve immediately with extra Parmesan and fresh parsley or basil.
