Sticky Pork Rib & Pap Bowls

Serves: 4–6

Tender pork ribs coated in a thick, sticky sweet-and-smoky glaze, piled over creamy buttery pap and finished with caramelised onions and fresh spring onion. Proper South African comfort food with a bold BlixSam twist.

Ingredients

Sticky Pork Ribs
  • 1.5 kg pork ribs, cut into individual ribs
  • 2 tbsp BlixSam Smoke Craft
  • 1 tbsp olive oil
  • ½ cup BlixSam Yanky Sauce
  • 3 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves, crushed
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 30 g butter
Creamy Pap
  • 1½ cups maize meal
  • 4 cups water
  • ½ tsp salt
  • 50 g butter
  • ½ cup grated mature cheddar
  • ¼ cup cream
Caramelised Onions
  • 2 large onions, sliced
  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1 tbsp balsamic or brown vinegar
To Finish
  • 2 spring onions, finely sliced
  • Fresh parsley, chopped
  • Extra BlixSam Yanky Sauce, optional

Method

  1. Preheat the oven to 180°C.
  2. Pat the ribs dry and rub them with olive oil and BlixSam Smoke Craft, making sure every piece is well coated.
  3. Arrange the ribs in a roasting dish, cover tightly with foil and bake for 50–60 minutes, until tender.
  4. Meanwhile, combine the BlixSam Yanky Sauce, honey, Worcestershire sauce, garlic, apple cider vinegar and brown sugar in a small saucepan.
  5. Simmer gently for 3–4 minutes until slightly thickened. Stir in the butter and remove from the heat.
  6. Remove the foil from the ribs and generously brush them with the sticky Yanky glaze.
  7. Increase the oven temperature to 220°C.
  8. Return the ribs to the oven uncovered for 15–20 minutes, turning and brushing with more glaze several times, until dark, glossy and caramelised around the edges.
  9. For the onions, melt the butter in a frying pan over medium-low heat. Add the sliced onions and cook slowly for 10–15 minutes until soft and golden.
  10. Add the brown sugar and vinegar and cook for another 2–3 minutes until sticky and caramelised.
  11. Meanwhile, bring the water and salt to a boil. Gradually whisk in the maize meal.
  12. Reduce the heat and cook gently, stirring regularly, until the pap is thick, smooth and cooked through.
  13. Stir in the butter, cheddar and cream to create a rich, creamy pap.
  14. Spoon a generous bed of creamy pap into each bowl.
  15. Pile the sticky pork ribs on top and spoon over some of the caramelised onions.
  16. Drizzle with a little extra sticky glaze and finish with spring onion and fresh parsley.

💛 BlixSam Tip

Tender first, sticky second. Keep the ribs covered during the first stage so they become beautifully tender. Only add the honey-rich glaze near the end at high heat. This allows it to caramelise into those dark, sticky edges without burning.
For an even smokier finish, give the glazed ribs 2–3 minutes over hot braai coals before serving.
