Pepper Steak & Onion Pap Bowls

Serves: 4–6
Prep: 15 minutes
Cooking: 30–35 minutes
Tender strips of beef steak, deeply caramelised onions and mushrooms smothered in a rich black-pepper gravy, served over creamy buttery pap. A hearty South African supper with loads of savoury flavour.

Ingredients

Pepper Steak & Onion
  • 750 g rump or sirloin steak, cut into strips
  • 2 tbsp cooking oil
  • 1½ tbsp BlixSam Steakhouse
  • 2 large onions, sliced
  • 250 g mushrooms, sliced
  • 2 garlic cloves, crushed
  • 1 tbsp tomato paste
  • 1½ tsp coarsely cracked black pepper
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar
  • 400 ml beef stock
  • 2 tsp cornflour
  • 2 tbsp cold water
  • 50 ml cream
  • 20 g butter
Creamy Pap
  • 1½ cups maize meal
  • 4 cups water
  • ½ tsp salt
  • 50 g butter
  • ½ cup grated mature cheddar
  • ¼ cup cream
To Finish
  • Fresh parsley, chopped
  • 2 spring onions, sliced
  • Extra cracked black pepper

Method

  1. Pat the steak strips dry and season evenly with BlixSam Steakhouse.
  2. Heat 1 tablespoon oil in a large frying pan or skillet over high heat.
  3. Sear the steak in small batches for 1–2 minutes per side until browned around the edges. Don’t cook it completely. Remove and set aside.
  4. Add the remaining oil and sliced onions to the same pan.
  5. Reduce to medium heat and cook the onions for 8–10 minutes, stirring regularly, until soft, golden and caramelised.
  6. Add the mushrooms and cook for another 4–5 minutes until browned.
  7. Add the garlic, tomato paste and cracked black pepper. Fry for 1 minute.
  8. Add the Worcestershire sauce and brown sugar, scraping all the caramelised bits from the bottom of the pan.
  9. Pour in the beef stock and bring to a gentle simmer.
  10. Mix the cornflour with 2 tablespoons cold water until smooth, then stir it into the gravy.
  11. Simmer for 3–5 minutes until the sauce becomes rich and glossy.
  12. Stir in the cream and butter.
  13. Return the steak and its resting juices to the pan and cook for only 2–3 minutes, until the beef is just cooked through and coated in the pepper gravy.
  14. Meanwhile, bring the water and salt to a boil. Gradually whisk in the maize meal.
  15. Reduce the heat and cook until the pap is smooth and cooked through.
  16. Stir in the butter, cheddar and cream until creamy and rich.
  17. Spoon the creamy pap generously into serving bowls.
  18. Top with the pepper steak, caramelised onions, mushrooms and plenty of gravy.
  19. Finish with parsley, spring onions and an extra crack of black pepper.

💛 BlixSam Tip

Cook the steak twice — but briefly both times. Sear it quickly at the beginning to develop colour, remove it, then return it only once the gravy is ready. This keeps the steak tender instead of letting it simmer until tough.
For an extra peppery punch, add another ½ teaspoon cracked black pepper just before serving rather than cooking it all in the gravy.
