🍝🍗 BlixSam Creamy Smoky Chicken Spaghetti Bolognese
Serves: 4–6Prep: 15 minutes
Cooking: 35–40 minutes A lighter twist on a family favourite. Golden chicken mince is simmered in a rich tomato sauce with BlixSam Pasta a la Sam and a subtle touch of Smoke Craft, then finished with butter and cream for a silky sauce that clings beautifully to the spaghetti.
Ingredients
- 500 g chicken mince
- 400 g spaghetti
- 2 tbsp cooking oil
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1 medium carrot, finely grated
- 1 tbsp BlixSam Pasta a la Sam
- ½ tsp BlixSam Smoke Craft
- 2 tbsp tomato paste
- 1 × 400 g tin chopped tomatoes
- 250 ml chicken stock
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar
- 30 g butter
- 2 tbsp cream or cream cheese
- ½ cup finely grated Parmesan, plus extra for serving
- Fresh parsley or basil, chopped
Method
- Heat 1 tbsp oil in a large frying pan over medium heat. Add the Pasta a la Sam and Smoke Craft and bloom for about 20–30 seconds.
- Add the onion, garlic and grated carrot. Cook for 4–5 minutes until softened. Remove from the pan and set aside.
- Increase the heat to high and add the remaining oil. Add the chicken mince and spread it across the pan. Leave it undisturbed for 2–3 minutes to develop some golden caramelisation before breaking it apart.
- Continue cooking until the chicken mince is lightly browned, then return the onion mixture to the pan.
- Add the tomato paste and fry for 1–2 minutes, stirring, until it darkens slightly.
- Add the chopped tomatoes, chicken stock, Worcestershire sauce and brown sugar. Stir well.
- Reduce the heat and simmer uncovered for 20–25 minutes, stirring occasionally, until the sauce has reduced and thickened.
- Meanwhile, cook the spaghetti until just al dente. Reserve about ½ cup of the pasta water, then drain.
- Stir the butter, cream and Parmesan through the Bolognese. Simmer gently for another 1–2 minutes until rich and glossy.
- Add the spaghetti directly to the sauce with a splash of reserved pasta water. Toss thoroughly until the sauce coats every strand.
