Pep ’n Zest & Saltitude Crispy Onion Rings
Serves: 4–6Prep: 15 minutes
Cooking: 10–15 minutes Golden, crunchy onion rings coated in a crispy Pep ’n Zest batter and finished piping hot with BlixSam Saltitude. Sweet onion, lemon-pepper crunch and that punchy salt-and-vinegar finish.
Ingredients
- 3 large onions
- 1 tbsp BlixSam Pep ’n Zest – Lemon Pepper
- 1 cup cake flour
- ½ cup cornflour
- 1 tsp baking powder
- ½ tsp smoked paprika
- 1 egg
- 1 cup ice-cold soda water
- ½ cup panko breadcrumbs, optional for extra crunch
- Oil, for frying
- BlixSam Saltitude – Salt & Vinegar, for finishing
- Fresh parsley, chopped, to serve
Creamy Pep ’n Zest Dip
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp fresh lemon juice
- ½ tsp BlixSam Pep ’n Zest
- 1 small garlic clove, crushed
Method
- Peel the onions and slice into thick rings. Separate the rings carefully.
- Pat the onion rings dry with kitchen paper.
- Mix the cake flour, cornflour, baking powder, smoked paprika and Pep ’n Zest in a large bowl.
- Reserve about ½ cup of the dry flour mixture for dusting.
- Add the egg and gradually whisk the ice-cold soda water into the remaining flour mixture until you have a smooth batter.
- Lightly coat each onion ring in the reserved seasoned flour.
- Dip into the cold batter, allowing excess batter to drip off. For extra crunch, lightly coat with panko breadcrumbs.
- Heat the oil to approximately 175–180°C.
- Fry the onion rings in small batches for about 2–3 minutes, turning as needed, until crisp and beautifully golden.
- Drain on kitchen paper or a wire rack and, while still piping hot, immediately finish with a generous shake of Saltitude.
