Mince Vetkoek

Ingredients

Vetkoek Dough

  • 1 kg cake flour
  • 10 g instant dry yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 650 ml lukewarm water
  • 2 tbsp sunflower oil
  • Oil for deep-frying

Curried Mince Filling

  • 2 tbsp olive oil
  • 1 kg lean beef mince
  • 2 tbsp BlixSam Bazaar Kerrie
  • 1 tsp BlixSam Grill Forge
  • 1 tsp BlixSam Garlic Melt
  • 2 large onions, finely chopped
  • 30 g fresh ginger, grated
  • 3 cloves garlic, crushed
  • 10–12 fresh curry leaves
  • 1 tsp ground cumin
  • 4 green cardamom pods, lightly crushed
  • 2 tbsp tomato paste
  • 2 ripe tomatoes, grated
  • 1 × 400 g can chopped tomatoes
  • 250 ml beef stock
  • 2 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste
  • 2 tbsp chopped fresh coriander

Method

Vetkoek

  1. Combine the flour, yeast, sugar and salt in a large mixing bowl.
  2. Add the lukewarm water and sunflower oil and mix to form a soft dough.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Cover and leave to rise in a warm place for about 1 hour, or until doubled in size.
  5. Knock the dough down and divide into 12 equal portions. Shape into smooth balls and leave to rest for 15 minutes.
  6. Heat the oil to 170–180°C and deep-fry the vetkoek in batches until golden brown and cooked through. Drain on paper towel.

Curried Mince

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onions and cook until soft and lightly caramelised.
  3. Stir in the garlic, ginger, curry leaves, cumin and cardamom. Cook for 1–2 minutes until fragrant.
  4. Add the tomato paste and cook for 2 minutes.
  5. Stir in the grated tomatoes and the canned chopped tomatoes. Simmer for 3–4 minutes.
  6. Add the beef mince and cook until browned, breaking it up with a spoon.
  7. Season with BlixSam Bazaar Kerrie, BlixSam Grill Forge and BlixSam Garlic Melt.
  8. Stir in the beef stock and Worcestershire sauce. Simmer uncovered for 25–30 minutes, until thick and rich.
  9. Season with salt and freshly ground black pepper to taste and stir through the chopped fresh coriander.

To Serve

  1. Slice each warm vetkoek open without cutting all the way through.
  2. Fill generously with the curried mince and serve immediately.

Serving Suggestion

Serve with grated Cheddar cheese, sliced tomato, mango chutney or a crisp side salad for a classic South African favourite.
