Pork Chops & Tomato Gravy Pap

Serves: 4–6

Juicy golden pork chops served over creamy buttery pap and smothered in a rich, slightly sweet onion-and-tomato gravy. Simple ingredients, big flavour and proper South African comfort food.

Ingredients

Pork Chops
  • 6 pork chops
  • 2 tbsp cooking oil
  • 1½ tbsp BlixSam Grill Forge
  • 1 tbsp Worcestershire sauce
  • 20 g butter
  • Black pepper, to taste
Tomato & Onion Gravy
  • 1 tbsp cooking oil
  • 2 large onions, sliced
  • 2 garlic cloves, crushed
  • 4 ripe tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 250 ml chicken or vegetable stock
  • 1 tbsp chutney
  • 1 tsp BlixSam Grill Forge
  • 20 g butter
Creamy Pap
  • 1½ cups maize meal
  • 4 cups water
  • ½ tsp salt
  • 50 g butter
  • ¼ cup cream
To Finish
  • Fresh parsley, chopped
  • 2 spring onions, sliced
  • Freshly cracked black pepper

Method

  1. Pat the pork chops dry and season them generously with BlixSam Grill Forge and black pepper.
  2. Heat the oil in a large frying pan over medium-high heat.
  3. Sear the pork chops for approximately 3–4 minutes per side, depending on thickness, until beautifully golden.
  4. Add the Worcestershire sauce and butter during the final minute and baste the chops with the foaming butter.
  5. Remove the pork chops and set aside to rest.
  6. Add another tablespoon of oil to the same pan and reduce the heat to medium.
  7. Add the onions and cook for 7–8 minutes until soft and beginning to caramelise.
  8. Add the garlic and cook for another 30 seconds.
  9. Stir in the tomato paste and 1 tsp Grill Forge and fry for about 1 minute.
  10. Add the diced tomatoes, brown sugar, Worcestershire sauce, stock and chutney.
  11. Simmer uncovered for 10–15 minutes, stirring occasionally, until the tomatoes break down and the gravy becomes thick and glossy.
  12. Stir the butter through the finished tomato gravy.
  13. Return the pork chops and their resting juices to the pan.
  14. Spoon some gravy over the chops and simmer gently for another 2–3 minutes.
  15. Meanwhile, bring the water and salt to a boil. Gradually whisk in the maize meal.
  16. Reduce the heat and cook until the pap is smooth and cooked through.
  17. Stir in the butter and cream until soft and creamy.
  18. Spoon a generous bed of creamy pap onto each plate or into bowls.
  19. Top with a golden pork chop and plenty of the chunky tomato-and-onion gravy.
  20. Finish with parsley, spring onion and freshly cracked black pepper.

💛 BlixSam Tip

Don't simmer the pork chops in the tomato gravy for too long. Sear them first, let them rest, then return them only for the final few minutes. You'll get juicy pork instead of dry chops.
For an extra old-school SA touch, make the tomato gravy slightly sweet with that spoonful of chutney — it works beautifully against the savoury Grill Forge pork.
